Ogni anno negli Stati Uniti si svolge uno degli eventi formativi più importanti per i professionisti del mondo del rum: la Rum University. Essa consiste in 5 giorni intensivi di corsi sul rum (dalla sua storia alla sua fabbricazione, dalla legislazione alla classificazione) che si tengono alla Moonshine University di Louisville, Kentucky.
L’ideatore, fondatore e principale docente della Rum University è Luis Ayala: consulente esperto per distillerie, editore della rivista “Got Rum?”, proprietario e fondatore di Rum Central che gestisce insieme alla moglie Margaret, Ayala è una delle massime autorità all’interno della rum community.
Quest’anno il corso della Rum University si è tenuto dal 4 all’8 febbraio. Questo è il programma che è stato seguito dall’evento:
“Day 1: The Business of Rum. We will guide you through the economic and political landscape of the industry, so you understand your competitors’ advantages and disadvantages.
Day 2: The Classifications of Rum. We analyze commercially available rums to identify their organoleptical characteristics and associated product ion costs.
Day 3: The Art of Rum Making. You will spend an entire day exploring the distillation of rum, understanding cuts and derived styles, using laboratory and production stills.
Day 4: History and Science of the Barrel. You will spend a full day exploring and understanding rum’s transformation inside the barrel.
Day 5: Essential Rum Laboratory and Techniques & Introduction to Rum Blending. On the last day of the course, you will devote time to understanding and using laboratory techniques, culminating in your blending of three different rums.”
